La fresa es una fruta no climatérica, con una vida postcosecha muy corta.
El manejo de la misma se realiza a temperatura ambiente lo cual propicia
su deterioro hasta en un 80% en sólo 8 horas. Otro factor de pérdida de
su calidad es el daño por hongos, especialmente por el moho gris (Botrytis
cinerea), y la pudrición blanda (Rhizopus stolonifer) dos problemas de
gran impacto en el fruto postcosecha.
