RESUMEN: En este trabajo se realizaron los análisis de dos modelos matemáticos de hidratación, empleados en distintos cereales y la rehidratación de algunas verduras y frutas. Los cuales son el modelo de Peleg propuesto en 1988 y el de Becker en 1960. Solo se analizaron estos modelos debido a que fueron los únicos encontrados en la literatura y que son ampliamente utilizados por autores contemporáneos. Durante este trabajo se propuso un modelo matemático de hidratación y dos de deshidratación, aplicados al grano de maíz, donde sus constantes tienen significado físico, el modelo de hidratación fue comparado con el modelo de Peleg. Los modelos de deshidratación fueron comparados entre sí, para analizar las ventajas y desventajas de cada uno de ellos. Estos modelos matemáticos fueron desarrollados a través de planteamientos distintos. Se realizó un análisis de la energía de activación a través de la ecuación de Arrhenis durante el proceso de nixtamalización-secado del gano de maíz a distintas concentraciones de Ca(OH)2 y distintos tiempos de nixtamalización-secado. Esperando comprender de qué manera el Ca(OH)2 y el tiempo, afectan a la energía mínima necesaria para que difundan las moléculas de agua al interior del grano de maíz y desde el grano hacia el exterior. Se analizó la viscosidad (RVA) de harinas de maíz nixtamalizadas con distintos tiempos de reposo, las cuales fueron comparadas con dos harinas comerciales, con la finalidad de percibir si el tiempo de reposo afecta de manera significativa a los gránulos de almidón y con esto a la calidad de la harina. Como posibles trabajos a futuro se propuso un segundo modelo matemático de hidratación el cual se espera comparar con el primero, para decidir cuál de los dos presenta el coeficiente de determinación más alto. Para el primer modelo matemático de hidratación se propuso elevar a la n el tiempo para que con esto se pueda medir el tiempo de retardo al inicio de la hidratación, debido a la impermeabilidad del pericarpio, la cual se puede apreciar más cuando la temperatura de nixtamalización disminuye. En todos los modelos matemáticos planteados de hidratación y deshidratación se encuentra una constante k, la cual tiene el mismo significado para todas las ecuaciones, debido a que esta constante enmarca características intrínsecas y extrínsecas al grano de maíz, se plantea realizar más estudios alrededor de esta constante para poderla dividir en dos constantes una que englobe los factores intrínsecas y otra a los extrínsecas al granos de maíz.
ABSTRACT: In this work analyses of two mathematical models of hydrate were carried out, they are employed in different cereals and the rehidratation of some vegetables and fruits. These models were proposed by Peleg in 1988 and model of Becker in 1960. Alone these two models were analyzed because they were the only ones found in the literature and that they are broadly used by contemporary authors. In this work a mathematical model of hydrate is proposed where their constants have physical meaning, which is compared with the model of Peleg. With regard to the process of dehydration two mathematical models intend, where their constants also have physical meaning, these models were compared among if, to analyze the advantages and disadvantages of each one of them. The hydrate model and the two models of dehydration were developed through different analysis. An analysis of the activation energy through the equation of Arrhenis is carried out during the nixtamalización-drying process of the kernel from corn to different concentrations of Ca(OH)2 and different times of nixtamalización-drying. Hoping to understand the form in that the Ca(OH)2 and the time both affect to the necessary minimum energy in that they diffuse the molecules of water to the interior of the grain of corn (activation energy) and from the grain toward the exterior. An analysis of the viscosity (RVA) is developed in flours of nixtamalized corn with different times of rest, which are compared with two commercial flours, with the purpose of perceiving if the time of rest affects from a significant way to the granules of starch and with this to the quality of the flour. As possible works to future a second mathematical model of hydrate is proposed which is hoped to compare with the first one, to decide which presents the highest coefficient of determination of both. For the first mathematical model of hydrate we propose to elevate to the n the time, with this we can measure the time of retard to the beginning of the hydrate, due to the impermeability of the pericarp, which we can appreciate when the nixtamalization temperature diminishes. In all the model mathematical outlined of hydrate and dehydration, a constant k is found, which has the same meaning for all the equations, because this constant frames characteristic intrinsic and extrinsic to the grain of corn, we wish to carry out more studies around this constant because is important to divide it in two constants, one that includes the intrinsic factors and another to the extrinsic ones to the grains of corn.
