El presente proyecto de investigación tuvo por objetivo la extracción y caracterización de distintos tipos de polisacáridos; tales como: fructanos, almidón y almidón resistente presentes en chinchayote, los cuales representan gran importancia e interés en el campo de la salud debido a diversos beneficios que proporcionan gracias a su fermentación en el intestino grueso. Se realizó un Análisis Químico Proximal (AQP) a la raíz tuberizada de chayote (chinchayote). Posteriormente se realizó la extracción de los polisacáridos de interés: Fructanos por el método enzimático-colorimétrico 999.03 AOAC. Fibra dietética, con el método enzimático-gravimétrico 991.43 AOAC; Almidón con método alcalino y almidón resistente mediante el método enzimático- colorimétrico 2002.02 AOAC. Asimismo se llevó a cabo la caracterización morfológica, reológica y textural del componente mayoritario (almidón) y se hizo la comparación con almidones de papa y maíz. Finalmente se realizó una modificación en el almidón (acetilación). Con el análisis AQP se obtuvo que el componente mayoritario es agua, seguido de carbohidratos con un 18.83%. El contenido de fructanos fue de 2.78% en materia seca y el de fibra dietética de 3.84%. El rendimiento de almidón obtenido por extracción fue de 76.3%, del cual el 12.67% se caracterizó como almidón resistente. Las micrografías obtenidas mostraron que los gránulos de almidón presentan una forma esférica con tamaño entre 5 y 30μm, mientras que el análisis de viscosidad proporcionó un valor de casi 12000cp. En relación a las pruebas oscilatorias indican que el almidón tiene un comportamiento de gel fuerte al igual que el de papa y de gel débil para maíz en concentraciones al 1 y 2%. En cuanto a análisis de textura se observó un valor de dureza de 80gf, valor que es menor al obtenido para el de papa que fue de 150gf a las 48hrs de haber preparado los geles, éstos valores se vieron incrementados al realizar las mediciones 8 días después pero presentando la misma tendencia a la anterior. Con respecto a la modificación química realizada se obtuvo un grado de sustitución de 0,053 y un porcentaje de acetilación de 1.4; así mismo al realizarle el RVA, se observó un aumento en la viscosidad alcanzando los 16000cp y en cuanto al análisis de FT-IR del almidón modificado se corroboró la presencia de grupos acetilo en la cadena de este almidón, con lo que se confirma el grado de sustitud
This research project was aimed at the extraction and characterization of different types of polysaccharides; such as fructans, starch and resistant starch present in chinchayote, which represent great importance and interest in the health field because of various benefits provided by fermentation in the large intestine. The fructan content was 2.78% dry matter and dietary fiber 3.84%. The starch yield was obtained by extraction of 76.3%, of which 12.67% was characterized as resistant starch. The micrographs showed that the starch granules have a spherical shape with size between 5 and 30 μm, while the viscosity analysis gave a value of almost 12000cp. Regarding oscillatory tests indicate that the starch has a strong gel behavior like the potato and maize weak gel at concentrations at 1 and 2%. As for texture analysis a hardness value of 80gf was observed value that is less than that obtained for potato which was 150gf to 48hrs having prepared gels, these values were increased when performing measurements 8 days but showing the same tendency to the above. With regard to chemical modification I made a degree of substitution of 0.053 and a percentage of acetylation of 1.4 it was obtained; Likewise When performing the RVA, an increase in viscosity reaching 16000cp and as for the analysis of FT-IR of modified starch the presence of acetyl groups in the chain of this starch was confirmed, whereby the degree is confirmed it observed substitution.
