RESUMEN:
La acuicultura es la industria de crianza de animales de mayor proyección a nivel global, esto se demuestra por su exponencial crecimiento desde la década de los setentas. Sin embargo, tiene un reto en un recurso limitante, la harina de pescado, ingrediente proteico por excelencia de los alimentos acuícolas, y que hoy enfrenta precios al alza. Ante esta problemática el uso de proteínas vegetales proveniente de plantas nativas se ha establecido como una de las grandes alternativas para desarrollar alimentos sanos a precios bajos. Entre las plantas nativas con potencial de uso como suplemento alimenticio acuícola, la chaya es uno de los insumos con mayores prospectivas a futuro, por lo que el objetivo del proyecto es: Evaluar las modificaciones metabólicas, fisiológicas y anatómicas de la tilapia alimentada con dietas isoproteicas a diferentes porcentajes basadas en harina de chaya y los efectos sobre la calidad del agua.
Para este fin primeramente se formularon, elaboraron y caracterizaron 4 dietas experimentales con niveles crecientes de inclusión de harina de chaya (20, 30, 40,
50) tras esto se aclimataron alevines en un bioterio de crecimiento previo a la división de los individuos en 4 tratamientos, con un control basado en una dieta comercial, por veinte días no hubo recambio de agua y se mantuvieron monitoreados los parámetros de calidad del agua, los cuales son fundamentales para la salud del pez, tras este periodo de días se realizaba un registro de los parámetros biológicos de la tilapia, longitud, peso y concentración de glucosa en sangre, al concluir el ensayo seis individuos por tratamiento fueron sacrificados para posteriormente realizar cortes histológicos de órganos internos, como intestino e hígado. Como parte final se llevaron a cabo análisis estadísticos interrelacionando los parámetros ambientales, el crecimiento entre tratamientos y la integridad fisiológica.

Aquaculture is the animal husbandry industry of greater projection globally, this is demonstrated by its exponential growth since the seventies. However, it faces a challenge in a limiting resource, fishmeal, protein ingredient par excellence of aqua feeds, and that today faces rising prices. Faced with this problem, the use of vegetable proteins from native plants is established as one of the great alternatives for developing healthy foods at low prices. Among the native plants with potential for use as aquaculture food supplement the chaya is one of the inputs with greater future prospects, so the objective of the project is: Evaluate the metabolic, physiological and anatomical changes of tilapia fed with isoproteic diets. Different percentages based on chaya flour and the effects on water quality. For this purpose, four experimental diets were initially elaborated and characterized with increasing levels of inclusion of chaya meal (20, 30, 40, 50). After this, juveniles were acclimatized in a growth habitat prior to the division of the individuals into 5 treatments. , with a control based on a commercial diet, for a period of twenty days there was no water exchange and the parameters of water quality were kept, which are fundamental for the health of the fish, after this period of days a registration was made of the biological parameters of tilapia, length, weight and concentration of glucose in blood, two individuals per treatment will be sacrificed to later perform histological sections of internal organs, such as intestine, gills, liver. As a final part, statistical analyzes will be carried out interrelating environmental parameters, growth between treatments and physiological integrity.
