Abstract:
RESUMEN: Al hablar del Estado de México y ubicar un estado del arte gastronómico
específico de la zona, se puede observar que son escasas las investigaciones que
abordan la cocina en los pueblos mágicos, es por ello que la presente investigación
se realiza con el fin de documentar los platillos tradicionales, alimentos endémicos
y costumbres alimentarias que se tienen en los pueblos mágicos de Tepotzotlán,
Valle de Bravo, Malinalco, El Oro y Metepec en el Estado de México tomando en
cuenta las características geográficas (las cuales ayudan a conocer que alimentos
se dan en cada zona ya que son estos los que dan pauta a los platillos que
distinguen este estado) para la elaboración de productos turísticos como rutas,
recorridos, circuitos o experiencias basadas en la gastronomía, así como también
para la preservación del este patrimonio inmaterial y como base para futuras
investigaciones de índole turística, gastronómica, social y ambiental.
El atlas de diversidad gastronómica propuesto está conformado por una serie
de mapas donde se ubican las localidades en que se producen los alimentos con
que se elaboran los platillos y bebidas documentados en el mismo y cuentan con
información a detalle del cultivo de los ingredientes, elaboración de los platillos y
bebidas, festividades que se realizan, etnias que conviven, entre otros datos que
permiten generar un análisis más completo sobre las dinámicas sociales y culturales
que se tienen en las zonas de estudio.
Este proyecto se elaboró por medio de un análisis documental, cuyos datos
fueron recopilados de diversas fuentes citadas a lo largo del texto e información
otorgada por el ayuntamiento de cada zona de estudio a quienes se les realizó
también un cuestionario con el fin de complementar la información recopilada.
ABSTRACT: Talking about the State of Mexico and locating a specific state of the art in the
field of gastronomy in this specific zone, It can be observed that there is few
research that deals with the cuisine in the magical towns, that is why this research
is carried out with the purpose of documenting traditional cuisine, endemic food and
dietary habits that are found in the magical towns of Tepotzotlán, Valle de Bravo,
Malinalco, El Oro and Metepec in the State of Mexico taking into consideration the
geographical features (those features help to known which food are found in each
zone since they are the ones that give guidelines to the cuisine that distinguish this
state) for the development of tourist products such as routes, tours, circuits or
gastronomy based experiences, as well as for the preservation of intangible heritage
and as a basis for future research of a tourist, gastronomic, social and environmental
nature.
The proposed atlas of gastronomic diversity is made up of a series of maps
showing the location where the foodstuffs from which the documented dishes and
beverages are made, and have detailed information on the harvest of the
ingredients, preparation of the dishes and drinks, festivities that take place, ethnic
groups that coexist, among other data that allows to make a complete analysis of
the social and cultural dynamics in the study áreas.
This project was elaborated through a documentary analysis, whose data
were compiled from various sources cited throughout the text and information
provided by the city councils of each of the studied localities to whom a questionnaire
was sent in order to complement the data gathering for the proyect.
