Abstract:
RESUMEN: En la industria artesanal existen alimentos tradicionales de alto valor nutrimental, como el pinole, el cual se elabora con harina de maíz tostado mezclado con cacao, canela o anís y puede ser endulzado con azúcar o piloncillo. En otras ocasiones es combinado con cereales y leguminosas como la haba, el garbanzo, la lenteja, la cebada, el arroz, el frijol, entre otros, aumentando así el nivel de nutrientes.
En este documento, se realizó el diseño y construcción de una máquina capaz de tostar
por tandas y por separado las distintas semillas que se usan para la elaboración del
pinole. El proceso consiste en seleccionar en una interfaz electrónica el tipo de semilla y
la cantidad para iniciar el proceso de tostado. Una vez iniciado el proceso, se precalienta
la cámara a 50°C y se ingresan de manera manual las semillas a tostar, para realizar el
tostado el sistema gira para obtener un tueste uniforme y una vez finalizado se abre la
compuerta manual para extraer las semillas.
Para este sistema se utilizó una LCD 20x4 y un teclado matricial programado con Arduino
para poder interactuar y de igual manera se empleó acero inoxidable T304 en los
elementos mecánicos que están en contacto con las semillas.
En las primeras pruebas se presentaron diversas fallas, las cuales fueron eliminadas
después de varias modificaciones que se realizaron, en las pruebas finales que se
ejecutaron se obtuvo un porcentaje aproximado del 5% de desperdicio, tiempos de
tostado entre 1.5 y 2 horas, y temperaturas entre 90 y 100°C.
Estas condiciones del tostado permitieron lograr un tueste uniforme en las semillas que
se utilizaron, lo cual cumple con el objetivo de mejorar y estandarizar la calidad del
tostado, además de aumentar la producción en un 250%.
ABSTRACT: In the handicraft industry there are traditional foods of high nutritional value, one of them is the pinole, which is usually made with toasted corn flour, sometimes sweetened and mixed with cocoa, cinnamon or anise. In other occasions it is combined with cereals and legumes such as beans, chickpeas, lentils, barley, rice, among others, increasing the level of nutrients.
In this document, we aim to show the design and build of a machine that is capable of
toasting separately the different seeds used for the elaboration of pinole. The process
consists in selecting in an electronic interface the type of seed and the quantity to start
the toasting process. Once the process has started, the chamber is preheated to 50°C
and introduce manually the seeds to be toasted, to make the toast the systems rotates to
obtain a uniform toast and once finished the manual gate is opened to extract the seeds.
For this system used a LCD 20x4 and a matrix keyboard programmed with Arduino were
used to interact and the same way T304 stainless steel was used in the mechanical
elements that are in contact whit the seeds.
In the first tests several failures were presented, which were eliminated after several
modifications, in the final tests that were executed an approximate percentage of 5% of
waste was obtained, toasting times between 1.5 hours, and temperatures between 90 and
100°C.
These toasting conditions allowed get a uniform toast in the seeds that were used, which
fulfills the objective of improving and standardizing the quality of toasting, in addition to
increasing production by 250%.
