Abstract:
RESUMEN: El aceite sufre diversos cambios físicos y químicos como la degradación oxidativa o fenómeno de enranciamiento, siendo uno de los parámetros que pueden impactar de manera negativa en la calidad, estabilidad en anaquel y almacenamiento de este tipo de productos.
El objetivo principal de la investigación fue evaluar el deterioro oxidativo de tres grupos
de aceites, entre los cuales el primer grupo hace referencia a aceites control (maíz y
soya), en el segundo grupo los aceites problema (de nuez y semilla de calabaza),
mientras que el tercer y último grupo se formó de aceites exploratorios (ajonjolí y
cacahuate). Para la evaluación del estado oxidativo primario se determinó el índice de
peróxidos, además de los dienos y trienos. Durante el tiempo de almacenamiento el
aceite de nuez presentó más estabilidad en la formación de peróxidos. Mientras que
el aceite de semilla de calabaza se caracterizó por los valores resultantes más altos
en las determinaciones.
ABSTRACT: The oil undergoes various physical and chemical changes such as oxidative
degradation or rancidity, being one of the parameters that can negatively impact thequality, shelf stability and storage of this type of product.
The main objective of the research was to evaluate the oxidative deterioration of three
groups of oils, among which the first group refers to control oils (corn and soy), in thesecond group the problem oils (walnut and pumpkin seed), while the third and last
group was made up of exploratory oils (sesame and peanut). For its evaluation of the
primary oxidative state by determining the peroxide index and determination ofconjugated dienes and trienes. During the storage time, the walnut oil presented more
stability in the formation of peroxides. While pumpkin seed oil was characterized by
higher values in the determination.
