Abstract:
RESUMEN: Los metales pesados (MP) se bioacumulan en los tejidos y órganos de los
organismos marinos, transfiriéndose en la cadena trófica y representando un riesgo
de salud tanto para los peces como para el hombre. Paradójicamente, algunos MP
son esenciales en bajas concentraciones en el metabolismo de los peces. En la
presente investigación se determinaron las concentraciones de elementos
esenciales (Cu y Zn) y no esenciales (Cd y Pb) en músculo, hígado y presas de 248
organismos de la cabrilla sardinera, capturados de marzo del 2014 a mayo del 2015
en Santa Rosalía, BCS, México. Los resultados presentados en peso húmedo,
indican niveles elevados de MP hasta 10 veces más en el tejido muscular (Cu:
11.61±34.3 μg/g, Cd: 0.06 ± 0.1 μg/g, Pb: 0.98 ± 1.5 μg/g, Zn: 377.33 ± 1389.9 μg/g)
que en el hígado (Cu:1.9 ± 3.9 μg/g, Pb: 0.2 ± 0.4 μg/g). Los machos presentaron
valores altos de Cu (13.64 ± 33.6 μg/g), Zn (433.8 ± 1627.5 μg/g) y Cd (0.08 ± 0.2
μg/g), mientras que las hembras de Pb (1.06 ± 1.7 μg/g). Estos valores se
encuentran en el límite de los permitidos para Pb (1.0 μg/g), y por debajo de la
norma mexicana para Cd (0.5 μg/g). Al comparar los MP y sus variaciones (sexos,
temporadas y tallas) no hubo diferencias significativas en músculo (P>0.05) pero si
en tejido hepático por sexos (p<0.05). Los niveles de MP fueron de 2 a 3 veces más
elevados en el 2015 respecto al 2014. De las etapas reproductivas, los porcentajes
altos de la atresia folicular (hembras) y reabsorción (machos) coincidieron con altos
niveles de Pb (1.0 – 2.0 μg/g) y Cd (0.2 – 0.4 μg/g). El 82% de los hígados analizados
presentaron lipidosis y el 70% necrosis. A medida que incrementaron las lesiones
graves en diciembre se registraron altas concentraciones de Cu. El índice del
órgano (Iorg) evidenció un 30% del total de daños al hígado. Los machos son menos
susceptibles de tener lesiones en el hígado (p<0.05). El eufáusido Nyctiphanes
simplex fue la presa que transfirió los mayores niveles de MP a la cabrilla sardinera.
La evaluación toxicológica y de beneficio a la salud indicó que la carne de cabrilla
no representa ningún peligro para su consumo y, por el contrario, representa un
beneficio de salud por la elevada cantidad de Cu y Zn. ABSTRACT: Heavy metals (MP) may be bioaccumulate in the tissues and organs of marine
organisms, transferring in the trophic chain and representing a health risk for both
fish and humans. Usually, some MPs are essential in low concentrations in the
metabolism of fish. In this investigation were determined the concentrations of
essential elements (Cu and Zn) and non-essential (Cd and Pb) in muscle, liver and
preys of 248 organisms of the Leopard grouper, captured from March 2014 to May
2015 in Santa Rosalía, BCS, Mexico. The results presented in wet weight indicated
high levels of MP up to 10 times more in muscle tissue (Cu: 11.61 ± 34.3 μg / g, Cd:
0.06 ± 0.1 μg / g, Pb: 0.98 ± 1.5 μg / g, Zn: 377.33 ± 1389.9 μg / g) than in liver (Cu:
1.9 ± 3.9 μg / g, Pb: 0.2 ± 0.4 μg / g). The males presented high scores of Cu (13.64
± 33.6 μg / g), Zn (433.8 ± 1627.5 μg / g) and Cd (0.08 ± 0.2 μg / g), while females
of Pb (1.06 ± 1.7 μg / g). These values are within the limit of those allowed for Pb
(1.0 μg / g), and below of the Mexican standards for Cd (0.5 μg / g). When comparing
MP and its variations (sexes, seasons and sizes) there were no significant
differences in muscle (P> 0.05) but in liver tissue by sex (p <0.05). MP levels were
2 to 3 times higher in 2015 compared to 2014. Of the reproductive stages, the high
percentages of follicular atresia (females) and reabsorption (males) coincided with
high levels of Pb (1.0 - 2.0 μg) / g) and Cd (0.2 - 0.4 μg / g). 82% of the livers analyzed
showed lipidosis and 70% necrosis. As the serious injuries increased in December,
high Cu concentrations were registered. The organ index (Iorg) showed 30% of the
total liver damage. Males are less susceptible to liver damage (p <0.05). The
euphausid Nyctiphanes simplex was the prey that transferred the highest levels of
MP to the Leopard grouper. The toxicological evaluation and the benefit to health
indicated that the meat of goat does not represent any danger for its consumption
and, on the contrary, represents a health benefit due to the high amount of Cu and
Zn.
