Abstract:
RESUMEN: El uso de insectos como fuente de proteínas en la dieta humana está ganando cada vez más apoyo en todo el mundo ya que es una alternativa más sostenible a las fuentes animales tradicionales. Esta investigación tiene como objetivo realizar un estudio electroforético en las fracciones proteicas de la hormiga chicatana y la evaluación de sus propiedades funcionales. Las diferentes fracciones proteicas obtuvieron los
siguientes pesos moleculares: las albuminas entre intervalos de 75 y 50 kDa, glutelinas
entre 75 y 50 kDa, glutelinas entre un rango de 100 y 15 kDa y por ultimo las prolaminas
un peso molecular entre 100 y 25 kDa. En cuanto a las propiedades funcionales la
fracción que obtuvo mejor desempeño en Capacidad y estabilidad espumante (CE y
EES) fueron las glutelinas obteniendo un CE de 2900 % y un EES de 11.67, de igual
manera las glutelinas tuvieron un mejor resultado en Capacidad de absorción de aceite
con 4.4 mL aceite/g muestra, en Actividad emulsificante (AE) dos fracciones
obtuvieron un buen resultado con 50% estas fueron las glutelinas y prolaminas, en la
Estabilidad emulsificante (EE) las glutelinas obtuvieron un mejor desempeño con
53.57% y por último la Capacidad gelificante ninguna fracción proteica conto con esta
propiedad funcional.
ABSTRACT: The use of insects as a source of protein in the human diet is gaining increasing support
worldwide as a more sustainable alternative to traditional animal sources. This research
aims to perform an electrophoretic study on the protein fractions of the chicatana ant
and the evaluation of their functional properties. The different protein fractions obtained
the following molecular weights: albumins between 75 and 50 kDa, glutelins between
75 and 50 kDa, glutelins between 100 and 15 kDa and finally prolamins with a molecular
weight between 100 and 25 kDa. Regarding the functional properties, the fraction that
obtained the best performance in foaming capacity and stability (CE and EES) were
the glutelins, obtaining a CE of 2900 % and an EES of 11.67. Likewise, the glutelins
had a better result in oil absorption capacity with 4. 4 mL oil/g sample, in Emulsifying
activity (AE) two fractions obtained a good result with 50%, these were the glutelins
and prolamins, in Emulsifying stability (EE) the glutelins obtained a better performance
with 53.57% and finally the Gelling capacity no protein fraction had this functional
property.
