RESUMEN: En el estado de Jalisco, México, la industria del tequila se ha incrementado significativamente y con ello también la generación de residuos en forma de bagazo. En el año 2008 se produjeron 312.1 millones de litros de tequila que originaron más de 450 millones de toneladas de bagazo, derivado de los diferentes procesos de molienda y extracción de azúcares del maguey para la obtención del tequila. El bagazo obtenido de la molienda a base de molinos o de desmeduladoras no es recomendable para utilizarlo como sustrato de cultivos, porque se argumenta que los componentes primarios difieren entre la materia prima del compostaje y el producto final. El objetivo de esta investigación fue evaluar el proceso de biodegradación del bagazo -obtenido bajo diferentes métodos de “molienda”- de maguey tequilero (A. tequilana Weber) proveniente de dos “tequileras” además de efectuar su caracterización física, química y fisicoquímica. Los resultados demostraron que el método de “molienda” modificó el contenido de médula y fibra y que el compostaje mejoró las propiedades físicas y fisicoquímicas, con excepción de la conductividad eléctrica. Las relaciones aire - agua del material mejoraron al refinarse, alcanzando valores óptimos. Por lo tanto, si el bagazo del maguey tequilero se va a utilizar como sustrato de cultivo, se recomienda someterlo a compostaje; independientemente de cualquiera de los dos métodos de “molienda”, siendo mejor aun cuando es refinado o molido de manera que se asemeje al sustrato de turba (Sphagnum).
ABSTRACT: In the state of Jalisco, Mexico, the tequila industry has increased significantly and hence the problem in terms of waste generation in the form of bagasse. In 2008 there was a production of 312.1 million liters of tequila, this originated over 450 million tons of bagasse, derived from the different processes of milling and extraction of sugars from the agave for tequila production. The bagasse obtained through mills, or by a depithing machine, is not recommended, for use as plant growth because it is argued that the primary components are different from de raw material for composting and the final product. The aim of this study was to evaluate the process of biodegradation of bagasse obtained under different methods of "milling" of agave (A. tequilana Weber) obtained of two "tequila factories", in addition, the physical characterization, chemistry and physic-chemistry were carried out. The results showed that the method of "grinding" changed the pith content, and fiber content, and that composting gave improvements to physical and physicochemical properties, except to electrical conductivity. The air-water relationship, improved in to refined materials reaching optimal values. Therefore, if the agave tequila bagasse is to be used as growing media plant, it is recommended to compost it regardless of the method of "milling" used, being best when it is crushed so that it resembles to the peat (Sphagnum) substrate.
