Diseño de un modelo de gestión de restaurante para un hotel de gran turismo de la Ciudad de México

Abstract

La presente investigación trata del diseño de un modelo sistémico utilizado en la gestión de restaurantes dentro de los hoteles de categoría Gran Turismo en la Ciudad de México, aplicado a el Restaurante los Dones del Hotel Sheraton centro Histórico y tiene como principal finalidad servir de base para la toma de decisiones gerenciales a través de la reestructuración de los flujos de información, la reorganización de la estructura organizacional del restaurante y la contemplación de los elementos que afectar el sistema en sus entornos internos y externos, para lo cual se utiliza el paradigma sistémico que permite conocer el fenómeno desde una perspectiva integral y conlleva hacia el entendimiento de los subsistemas cocina,servicio, caja y bar así como a las relaciones que lo componen y que muestran la forma que toma el sistema Restaurante los Dones. Con el fin de establecer una visión Holistica del desarrollo el trabajo, se determinó la utilizar el paradigma de sistemas y la metodología de Sistemas Suaves de Peter Checkland, en donde los sistemas suaves se identifican como aquellos que se les da mayor importancia a la parte social, el componente del individuo o del grupo social que se toma como un sistema de actividad humana pleno de propósitos capaz de desplegar comportamientos, un sistema suave es un sistema que no solo es capaz de escoger medios para alcanzar determinados fines sino que también es capaz de seleccionar y cambiar sus fines, es decir que los problemas en sistemas suaves no tienen estructura fácilmente identificable, en contraste con los sistemas duros que permite la formalización matemática de los conceptos relaciones y transformaciones del sistema por medio del estudio de las operaciones pasadas por determinados hechos para predecir las operaciones futuras. Dentro de la investigación se utilizó un marco teórico referencial sobre los componentes que integran el sistema mayor denominado Hotel de gran turismo, por lo que esta investigación puede servir de base para investigaciones posteriores y fungir como modelo de aplicación para los restaurantes de los hoteles con categoría Gran Turismo de la Ciudad de México.

The present research is about the systemic model used in the drive management of a restaurants whom bellow’s to the Mexican city grand tourism hotel, it is apply to the Los Dones Restaurant in to the Sheraton Historical Center Hotel and it has like a principle main to be used for the manager decisions trough the restructured of the information affluence, the re-organization of the business frame of the restaurant and the contemplation of the elements that affect the system in it’s in-side, out-side environments, for that its used the systemic paradigm that give us the opportunity to know the phenomenon in its integral whole and help us to understand the sub-systems kitchen, service bar an cashier apartments so as the relations that compound it and to tell us the way to take restaurant Los Dones. With the end of establish an holistic view in the global environment of the work its determinate the use of the systemic paradigm of systems and the use of the save methodology of Peter Checkland where the soft system are relational like those that have more importance to the social part, and the individual component or the social group that is taken like a human activity system full of goals, and with the capacity of spread behaviours. An a soft system is one that not only is capable of select and change its own on goals, a mean that the problems in soft system not have a specific frame, cooperated with the hard system that permit the mathematics formation of the concepts relations and transformations of the system through the study of the last operations to determinate the future operations. For to be combining for the objectives of the research, it was used of a theory framework about the components that integrated the mayor system denominated Grand Tourism Hotel, together with the description of each element of the subsystems that compound the whole system.Given especially relevant to the relations that are established in the applicant phenomenon of the Sheraton Mexico City Hotel, serving this research for use of posterior’s researches and serving like an application model in the segment of grand tourism.
