Abstract:
RESUMEN: El presente trabajo analiza las proyecciones demográficas al año 2030, que
indican que 13% de la población mundial pertenecerá al segmento de Adultos
Mayores (United Nations, 2017a; SECTUR, 2018c), desde el enfoque turístico, se
pueden anticipar acciones que permitan atender a este segmento adecuadamente,
por lo que, se propone afrontarlo desde el área de Alimentos y Bebidas (A y B),
particularmente en el municipio de San Miguel de Allende (SMA), Guanajuato, ya
que es uno de los destinos más elegidos por dicho segmento.
De acuerdo a los estudios de diversos autores (Patterson, 2006; Magaña,
Romero y Jácome, 2016; Cueva, 2014), los Adultos Mayores (AM) presentan
necesidades: búsqueda de paquetes turísticos con información clara y detallada,
fácil acceso a las plataformas de reservaciones; una dieta específica rica en
vitaminas sin calorías en exceso y atención especializada que contrarreste sus
sentimientos de inutilidad y fomente su deseo por salir de la rutina (IAAM, s.f.;
Magaña, Romero y Jácome, 2016; Drewnoski y Evans, 2001).
En la presente investigación se encontró que para poder satisfacer las
necesidades turísticas de los AM en el área de A y B, es indispensable que el
personal esté capacitado, de modo que los AM percibirán que son escuchados y
atendidos adecuadamente.
Por esta razón, se generó como producto final una propuesta de programa
de capacitación que consta de seis secciones: 1) Diagnóstico de necesidades del
turista Adulto Mayor en SMA; 2) Temas, orden y estructura para la capacitación; 3)
Logística de recursos humanos y materiales; 4) Establecimiento del presupuesto; 5)
Implementación de la capacitación, y 6) Instrumentos para la evaluación del
programa de capacitación.
ABSTRACT: This work analyze the demographic projections for the 2030 year, which indicate that
13% of the world population will belong to the Older Adults segment (United Nations,
2017a; SECTUR, 2018c), from the tourism perspective, there are many actions that
can be taken to anticipate a better service to attending this segment, therefore, this
project propose to face it from the Food and Beverage area, particularly in the
municipality of San Miguel de Allende (SMA), Guanajuato, because it is one of the
most chosen destinations by said segment.
According to the studies of various authors (Patterson, 2006; Magaña, Romero and
Jácome, 2016; Cueva, 2014), Older Adults present specific needs like: search for
tourist packages with clear and detailed information, easy access to platforms
reservations; a specific diet rich in vitamins without excess calories and specialized
attention that counteracts their feelings of worthlessness and encourages their
desire to get out of the routine (IAAM, s.f .; Magaña, Romero & Jácome, 2016;
Drewnoski & Evans, 2001).
In the present investigation it was found that in order to satisfy the tourist needs of
the Older Adults, in the area of Food and Beverage, it is essential that the personnel
be trained, so that the Older Adults will perceive that they are properly listened to
and attended to.
For this reason, this training program proposal consist on six sections was generated
as the final product: 1) Diagnosis of the needs of the Older Adult tourist in SMA; 2)
Topics, order and structure for training; 3) Logistics of human and material
resources; 4) Establishment of the budget; 5) Implementation of training, and 6)
Instruments for evaluating the training program.
