Abstract:
RESUMEN: El consumo de alimentos enriquecidos con probióticos (microrganismo que generan
beneficios en la salud) ha incrementado en los últimos años. La industria alimentaria ha
mostrado un mayor interés por estos productos debido a las ganancias que representan,
sin embargo, la gran mayoría de los fabricantes adicionan a los probióticos directamente
sobre la matriz alimentaria empleándola como vehículo a pesar de que se ha demostrado
que cuando los probióticos se encuentran libres en un alimento disminuye su capacidad de
sobrevivir a diferentes condiciones de almacenamiento y digestión, por ello la
microencapsulación es una tecnología que se emplea para garantizar una entrega eficaz de
los probióticos generando beneficios sobre la salud al mejorar la salud intestinal. En este
estudio se utilizó almidón retrogradado (ARet) y pectina (PEC) en una mezcla en diferentes
proporciones y se estableció un sistema de encapsulación que permitió mantener la
viabilidad del probiótico Lacticaseibacillus rhamnosus GG en condiciones de
almacenamiento y digestión (in vitro). Para ello se propusieron dos procedimientos de
encapsulación que se denominaron: sistema de gelificación conjunta (GC) y recubrimiento
(REC). Mediante la caracterización fisicoquímica se demostró que las mezclas 1:1 y 3:1 del
sistema GC presentaron una mejora en sus propiedades reológicas, estabilidad térmica,
resistencia y organización, con respecto al almidón retrogradado debido a la interacción
molecular del almidón y pectina. Para el sistema REC se corroboró el efecto de
recubrimiento para las mezclas 1:3 y 1:1, a partir de estos resultados se llevó al proceso de
microencapsulación la mezcla 1:1 en donde el sistema GC tuvo una % EE del 88.08 ± 2.45 y
el sistema REC del 70.14 ± 0.50 % EE, ambos sistemas demostraron tener una protección
del probiótico en condiciones de almacenamiento y digestión in vitro, aunado a esto se
tiene un efecto prebiótico importante por los valores de % AR que van desde 11.64% por
lo que es posible obtener un beneficio en la salud a partir de su consumo.
ABSTRACT: The consumption of foods enriched with probiotics (microorganisms that generate health
benefits) has increased in recent years. The food industry has shown a greater interest in
these products due to the profits they represent; however, the producers usually add
probiotics directly to the food using it as a vehicle even though it has been shown that free
probiotics in a food do not survive storage and digestion conditions, for that the
microencapsulation is a technology used to ensure effective delivery of probiotics that
generates health benefits-by improving gut health. In this study, retrograded starch (ARet)
and pectin (PEC) were used at different proportions and an encapsulation system was
prepared that allowed maintaining the viability of the probiotic Lacticaseibacillus
rhamnosus GG during storage and digestion conditions. For this, two encapsulation
methods were proposed, which were called: joint gelling system (GC) and coating (REC).
The GC system preserved the viability of the probiotic with a value of 7.19 ± 0.04 log10
UFC/g at 30 days of storage and digestion in vitro while the REC system did not demonstrate
greater protection with respect to free cells. Physicochemical characterization showed that
the mixtures 1:1 and 3:1 of the GC system had an improvement in their rheological
properties, thermal stability, strength, and structural organization, with respect to
retrograded starch due to the molecular interaction of starch and pectin. For the REC
system, the coating effect for the 1:3 and 1:1 mixtures was corroborated from these results,
the 1:1 mixture was used for the microencapsulation process where the GC system had a %
EE of 88.08 ±2.45 and the REC system of 70.14 ± 0.50 % EE, both systems showed probiotic
protection under storage and digestion in vitro conditions; in addition, there is an important
prebiotic effect due to the values of % AR of around 11.64% suggesting a possible health
benefit from its consumption.
