Abstract: | RESUMEN: En la actualidad el proceso de nixtamalización tradicional se sigue utilizando, para
producir tortillas y harina instantánea de maíz nixtamalizado. Este proceso tiene
como desventajas una ineficiente transferencia de calor, largos tiempos de proceso
y producción de contaminantes como el nejayote. Como una alternativa de solución,
se propone utilizar el calentamiento óhmico para la producción de harinas
instantáneas de maíz. Con base en ello, la presente investigación tuvo como
objetivo caracterizar física, química y reológicamente harinas, masas y tortilla de
maíz, procesadas por calentamiento óhmico, comparadas con una harina control de
maíz nixtamalizado de forma tradicional. Se realizaron nueve tratamientos de
calentamiento óhmico para obtención de las harinas, empleando condiciones que
involucraron humedades de 45%, 53% y 60%, temperaturas de 70°C, 80°C y 90°C,
y tamaños de partícula de 0.5, 0.8 y 1.3 mm. Se evaluaron parámetros de calidad
físicos y químicos en harinas, reológicos en las masas, texturales y de vida de
anaquel en las tortillas. A partir de este estudio se encontró que los tratamientos
semejantes al control fueron: los de partícula 0.8 mm, humedad de 53% y
temperaturas de proceso de 70°C y 80°C, y el tratamiento con partícula de 1.3 mm,
humedad de 45% y temperatura de 80°C. Las similitudes encontradas fueron en la
harina: la retrogradación y luminosidad; en la masa: las fuerzas de adhesión y
cohesión, su humedad y rendimiento; y, en las tortillas se encontraron similitudes en
el color, la rolabilidad, fuerzas de tensión y corte. Estos tratamientos y el control
tuvieron los menores rendimientos en masa y tortilla, así como baja humedad en la
tortilla. El resto de los tratamientos evaluados presentó mejores rendimientos de
masa y tortilla, menor retrogradación, menores fuerzas de tensión y corte, dando
lugar a tortillas más suaves en comparación con el control. En los parámetros
químicos se encontró que el proceso óhmico conserva de manera eficiente el
contenido de proteínas presente en el maíz de origen. De este modo se concluye
que el calentamiento óhmico es una nueva alternativa de proceso para la
producción de harinas instantáneas de maíz con propiedades fisicoquímicas
similares e incluso mejores a las harinas tradicionales. ABSTRACT: At present, the traditional nixtamalization process is still being used in the production of tortillas and instant nixtamalized maize flour. This process has the disadvantages of inefficient heat transfer, long processing times, and production of pollutants in the nejayote (cooking liquid). As an alternative solution, it is proposed to use ohmic heating in the production of instant maize flour. With this in mind, the present research work aimed a the physical, chemical, and rheological characterization of maize flours, masas, and tortillas obtained by the ohmic process, and compare these samples with a control maize flour obtained by traditional nixtamaization. Nine treatments were evaluated, using conditions such as: moisture contents of 45%, 53%, and 60%, temperatures of 70°C, 80°C, and 90°C, and particle sizes of 0.5, 0.8, and 1.3 mm. The parameters evaluated were of the physical and chemical type in the case of the flours, and rheological in the masas, while in the case of the tortillas textural properties and shelf life were evaluated. The present study showed that the treatments resulting in a product similar in quality to the control were those with a particle size of 0.8 mm, a moisture content of 53%, and processing temperatures of 70°C and 80°C, as was the treatment with a particle size of 1.3 mm, a moisture content of 45% and a temperature of 80°C. The quality similarities were found in the aspects of retrogradation and flour lightness in the case of the flours, in the aspects of adhesion, cohesion, moisture, and yield in the case of masas, and in color, rollability, tensile strength, and cutting force in the case of tortillas. These treatments, as did the control, showed the lowest masa and tortilla yields, as well as a low tortilla moisture. The other treatments showed higher yields in masa and tortilla, less retrogradation, and lower tensile strength and cutting force, producing softer tortillas, compared to the control. Regarding chemical parameters, the ohmic heating helps to preserve the protein content present in the original raw maize. Thus, the conclusion is arrived at that ohmic heating is a new alternative process for the production of instant maize flours with similar or even improved physicochemical properties, compared to the traditional flours. |
